A considerably better night's sleep last night courtesy of the fan running all night and a bright and early start to the day. Called in on Di to see if she had some mint (I seem to manage to kill mine regularly) for tonight's dinner and while we were gassing away at the car, Jean pulled up to throw bags of cherries at us. So now the fruit count in the house is beyond ridiculous and the apricots have all been stewed for consumption later. 5 Kg of apricots goes a fair way so there are some tasty pies and other delectables in my future (once I have lost weight, of course!).
Just the right temperature today - sunny with occasional wind gusts, but fairly calm at present.
So, Raspberry and peach and orange-juice shake for breakfast, banana shake for lunch, greengages for afternoon tea and tonight's dinner is Moroccan Chicken which is currently marinating in the fridge. Dead easy marinade: ! chilli, 2 crushed garlic cloves, juice of one lemon, 2 tsp ground cinnamon, 3tsp ground cumin, 4 tbsp sultanas, 4 tbsp pine nuts and a tbsp olive oil. mmmmmmmmmm
Cook tossing meat (I have cubed the chicken, but you can just bung in breasts and turn them once if you prefer) and halfway to done, throw in a whole orange cut in half and then thinly sliced, as well as 4 tbsp of chopped mint. Serve with couscous and yoghurt, though in my case the cous cous is off the menu and the yoghurt is lo-fat (ewgh).
